St. Lucia
Hey, fam! I’m so excited to share a few highlights from my most recent girls trip to St. Lucia. From catamaran rides through the crystal clear waters and the most unforgettable views of the Pitons, to harvesting our own cacao and enjoying the freshest foods the island has to offer… we absolutely loved this tropical escape.

I loved our long weekend at the Rabot Hotel! We rented a car (vs. booking a driver or helicopter transfer) and drove ourselves from the airport to the property. When we arrived, we were greeted with cool towels, welcome drinks, and warm hellos from amazing staff. After checking in, they took us by golf cart to our room. We stayed in a queen cabin centrally located near the pool and restaurant. This location was perfect for a girls trip, but maybe not for a romantic couple looking for more privacy. Our room was open air (had no window screens) and had an outdoor shower, which I loved because it put us right in the middle of nature …AND because I came prepared with plenty of bug spray. (Beware: you will need to spray yourself with some sort of repellant every day, throughout the day to avoid being eaten alive.) The rooms were also equipped with mosquito nets and electric fly swatters.
Rainforest Bowl w/ pineapple & callaloo (local spinach) base, topped with granola, roasted coconut, almond, watermelon, and banana.
Rabot Estate Eggs Benedict w/ homemade English muffin, poached estate eggs, smoked bacon and Cacao vinegar Hollandaise [PRO TIP - add a side of their grilled tomatoes - probably the best tasting tomato I’d ever eaten in my life]
Warm Cacao Banana Bread w/ caramelized sauteed banana, chocolate and hazelnut spread
Breakfast each morning is complimentary, overlooks the Pitons, and was one of my favorite parts of the trip. I am typically not a huge breakfast person, but this was worth waking up early for. With a focus on local fruits, freshly baked breads, and the energizing power of cacao, I couldn’t wait to go to sleep just so I could wake up and eat—we were the first in the restaurant every morning 😇
The menu is a la carte (vs. buffet style) but you can order as much / whatever you would like. Before our meal each morning, they served us a colorful fruit platter and fresh wellness smoothie. The fact that everything is basically grown on site made it the most mouth watering start to every day.
Hotel Chocolate employs truly sustainable, climate-resilient farming methods, such as biodiverse shade-growing. They’ve also helped revitalise the cacao industry across the island by distributing tens of thousands of high-quality cacao seedlings and by paying premium prices for every cacao bean each farmer grows.
